I have removed the engine and put it back in

Thats what i've seen mostly is the cause. I would check that first.Check the connections on the end of the sensor wire.
What harness do you have? Most times when the push on type connector for the coolant sensor have to be installed on the end of the conversion harness wire. Check this connection to make sure it hasn't come apart. It may have been damaged in the process of removal.
Check your fuses. Also make sure that whatever you have the coolant temp sensor screwed into is grounded. If you have a radiator hose insert, make sure that the grounds are good that are attached to the insert itself.
