So now that I have my engine, I am learning slowly, and understanding much more about the k series.

My question is why cant I remove the power steering pump on my setup? I will not be running the ac, but can I remove the PS pump also? Please help me understand!

PS, You can tension the belt with washers on the alternator, no?

there is no consequences to removing the pump. you just have to find another way to tension the belt... like you said, washers, or running the ep3 idler pulley setup...

Simply put them in until its tight.
